What is hanging weight? This refers to the weight immediatly after the cow is slaughtered and the organs have been removed. The meat is then hung for 21 days. During this process the meat will shrink some. Between this shrinkage and the bone removal through butchering, you are *typically* left with 60-65% of the hanging weight. Hanging beef before butcher is required in order to provide tenderness, better flavor, and overall quality.
